Coconut Atta Biscuits Recipe
This recipe is gonna be awesome for sure and you will love it. This is a recipe that is loved by everyone in my family. These biscuits just taste fab and are also healthy. You are set to make these cripsy biscuits Yes, that's what I call these biscuits.
The reason behind why these biscuits are everyone's favourite is that they are made up of atta/ whole wheat flour and jaggery which I prefer in most cookie recipes. This also contains the goodness of healthy fats in the form of coconut oil which provides our body with healthy fatty acids and increases good cholesterol.
So without any further delay let's check out some 'Tips and Tricks'.
Some tips and tricks for making perfect Coconut Biscuits
. Chilling the dough
This is a very important step to chill the dough in the fridge. As we are using coconut which contains oils, which are liquid at room temperature, so we should chill the dough for at least 15-20 minutes to let the fats solidify which will help the dough retain its shape.
. Having Patience as well as to know your Oven
Knowing your oven is a very basic step whenever you are baking. It is very important to know how your oven works. If your oven does not have the convection mode, which is basically a fan that helps distribute heat equally to every part of the oven, you can just flip the pan from left to right, which will help you bake your cookies equally from both sides.
Do not open the door and flip the tray every now and then, you can just flip it once when the cookies are half-baked.
. About Desiccated Coconut
Many of us get confused between the two general coconut textures used i.e. Shredded coconut and Desiccated coconut. Desiccated Coconut is comparatively smaller in size and it's a bit dry. Today I am using desiccated coconut but, No Worries! It's totally okay to use shredded coconut.
. Types of Sugar Used
For this recipe, I am using Jaggery and caster sugar to give my cookies the sweetness and chewy ness of jaggery and caster sugar's crunch. You can totally avoid caster sugar and use jaggery, the only effect it will create is that you will get slightly less crunchy but I assure you the taste will remain the same.

- 1+1/4 cup atta - 1/2 tsp baking powder - 1/4 tsp desiccated coconut - 1/3 cup coconut oil - 1/4 cup jaggery - 2 tbsp caster sugar - 1 tsp vanilla extract - 5-6 tbsp milk - Sea salt(Optional) |

You can half or double these as per your requirement. |
How To Make It?
1) Take a bowl and add the coconut oil, jaggery, and caster sugar and combine well.
2) Add vanilla extract and milk into this mixture and form a wet mixture.
3) Now, add all the dry ingredients whole wheat flour(atta), baking powder, and desiccated coconut, and mix them with your hands to form a dough.
4) Refrigerate this dough for about 20 minutes and between this free time preheat your oven at 180⁰ C.
5) Once chilled, take out the dough from the refrigerator and roll out about the thickness of half an inch between the two layers of parchment paper.
6) Bake this for about 9-10 minutes in the preheated oven or till the sides turn golden brown.
7) Once baked take it out and let it cool down and your delicious coconut biscuits are ready to munch on.
