Today's special recipe is veg Biryani, I love to eat this recipe whenever I don't have chicken or mutton (Meat). Biryani is a very famous recipe in India. It is a rich recipe made by using rice, meat, eggs, etc. 

You will be amazed to know that you can make Biryani very easily at home. I want to share my secret recipe on how to make Egg Biryani at home. 

So, let's get started.





To make Egg gravy:

- 5 pieces of Boiled eggs
- 5 pieces of Green Cardamom
- 4 pieces Cinnamon
- 2 pieces Bay leaf
- 1 piece Javitri (Mace)
- 1/2 tsp Shahjeera
- 2 medium onions (Sliced)
- 1 tbsp Ginger-garlic paste
- 3 tomatoes (Chopped)
- Salt(As per taste)
- 1/2 cup curd
- 1 tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp Kasoori Methi/Fenugreek leaves (Crushed)
- 2 tsp Biryani Masala
- A handful of Mint leaves
- 2 tbsp Coriander leaves
- Green Chillies (As per your taste)

For Making/Boiling Rice:

- 500 grams Basmati Rice
- 3 pieces of Green Cardamom
- 4 pieces Cinnamon
- 1 Bay leaf
- 4 pieces Cloves
- 1/2 tsp Shahjeera
- 5 tbsp salt 

For layering:

- 1 Fried Onions
- 2 tsp Mint leaves
- Few strands of Saffron soaked in warm water
- Kevra water
- Rosewater
- Cardamom powder

How to make it?

1. Take a pot and add 1.5 liters of water and boil it.
2. When the water starts to boil add green cardamom, cinnamon, bay leaf, cloves, shah jeera, and salt.
3. Wait for a few minutes and wait for the water to absorb the flavor of the ingredients.
4. Now, take out the ingredients and add the rice into the boiling water.
5. Cook the rice till it gets cooked 70-80%. When the rice is cooked keep 1/2 cup of the water aside and drain the remaining.

6. Now, take a pan and add around 5-6 tbsp of oil in it.
7. Add the sliced onions when the oil is hot and fry them till they acquire golden-brown color.
8. Remove some of the oil from the pan and keep about 1-2 tbsp in the pan to fry the other ingredients to make the egg curry.
9. Add the Green Cardamom, Cinnamon, Bay leaf, Javitri (Mace), Shahjeera, Ginger-garlic paste, and cook them nicely.
10. Add some amount of water so the spices do not burn.
11. Now add Turmeric powder, Red chili powder, and Biryani Masala and give it a quick stir.
12. Now add the tomatoes and salt as per taste and cook them for 5 minutes. (Stit it at certain time intervals.)
13. When the oil starts oozing out from the sides add the curd and roast it nicely on high flame.
14. Stir this gravy continuously till it gets a nice boil.
15. Cook the gravy till oil starts accumulating at the top of it.
16. Now, add some of the fried onion and give it a nice stir.
17. Add the Kasoori methi which will add a nice flavor and fragrance into this biryani and mix it well.
18. At this stage add the boiled and peeled eggs and mix them well and cook for about 5 minutes.
19. Now add 1+1/2 cup water and give it a nice stir. 
20. Now turn the flame off and add the mint leaves, coriander leaves, and some Green Chillies.

21. Now take an earthen pot or a metal pot as per your convenience and apply some oil.
22. Add a thin layer of the boiled rice and spread them evenly.
23. Now add the egg curry into the pot and spread evenly and also some of the mint leaves and fried onions.
24. Add the remaining rice evenly and cover the egg curry and add the 1/2 cup of water which we had preserved after boiling the rice.
25. Add the Saffron soaked in water, fried onions, mint leaves, kewra water, rosewater, cardamom powder, and the remaining oil which was left after frying the onions. You can also add ghee, butter as per your choice.

For the cover, we need a tight-fitting lid or Take a kneaded dough and roll it and place it on the top of the pot where we have to put the lid.
26. Cover this with a lid and seal it and put it in the Gas burner and start cooking it on high flame for 2-3 minutes.
27. Now let it cook for 10-12 minutes in low flame.
28. After 10-12 minutes turn off the flame and let it rest for 15 minutes this will help the rice to absorb all the flavors.
29. Now to take out the rice we need a flat spoon with a very thin edge. We need to take out the Biryani very carefully so that the rice would not break.
30. Dig it from one side and fluff up the rice and take it out in a plate.

Your tasty Egg Biryani is ready to be served. Serve it with Raita and enjoy!
