This recipe is going to be amazing and super easy and very very tasty.
Today I am going to tell you the recipe of dahi vada by using potatoes and sabudana. It is a vrat special recipe.
Ingredients
To make vada:-
- 2 medium-sized potatoes
- 1 cup sabudana
- Green chilli (2-3 as per taste)
- 1 tsp chopped ginger
- 1/3 cup chopped coriander leaves
- Salt as per taste
- Oil for frying
To make the dahi/curd mix:-
- 3 cup curd/dahi
- Sendha/Black Salt (as per taste)
- 1 tsp Black pepper powder
- 2 tbsp sugar
To make the meetha/sweet tamarind chutney:-
- Tamarind
- Sendha namak/salt (as per taste)
- Jaggery
- If jaggery is not available then you can also use 4-5 tbsp sugar.

To make teekha/green chutney:-
- 1/2 cup Coriander leaves
- 1/4 cup mint leaves
- 2-3 green chillies
- 2 tsp roasted masala
- 1 tsp lemon juice
- Sendha Namak/ Normal Salt (as per taste)
For garnishing:-
- Coriander leaves
- Sev
How to make it?
Vade:-
1) Take a bowl and add all the ingredients mentioned above.
2) Mix all the ingredients well by mashing them.
3) Make a soft dough and divide it into 6 small portions.
4) Take each portion and make a small ball with a hole in the middle. Same as in donuts.
5) Take a pan and add sufficient oil to deep fry the vada. Fry the vada in medium flame till it turns light brown in colour.
6) Take out the vada in a plate with tissue paper.
Dahi mix:-
1) Take a bowl and add the curd/dahi, Sendha Namak, black pepper powder and sugar and mix them well.
2) Now add 1/3 cup water in the dahi mix and mix all the ingredients with water well.
Green chutney:-
1) Take a mixer bowl or a blender jar and add the coriander leaves, mint leaves, green chillies, roasted masala, lemon juice and salt and grind them to make a paste.
2) Transfer this paste into a bowl and add 1-2 tbsp water and mix well.
Meetha/sweet tamarind chutney:-
1) Take a pan and add 1/2 litres of water and start heating it.
2) Now add the tamarind, jaggery/sugar, roasted masala and salt and mix them well.
3) Stir the mixture continuously till the consistency gets slightly thick.
4) Now, take a bowl and a sieve and separate the residue and the chutney.
Dahi vada:-
1) Take the bowl in which the dahi/curd mix is kept and add the vadas to the mixture.
2) Let it soak the curd.
3) Serve it with the teekha chutney, meetha chutney, and a pinch of roasted masala. And garnish it with some Sev.
