Veg Manchurian is a tasty Indo Chinese dish of fried veggie balls in a sweet, spicy, and tangy sauce. We can make Manchurian in two different variations.

But today we are going to make Veg Manchurian Gravy. This recipe tastes amazing with the Chinese main course like Veg Fried Rice, Hakka noodles, etc. This recipe consumes very less oil and also contains lots of veggies.

Nothing to worry now, if your kids do not love to eat vegetables, just open my recipe, and start making tasty veg Manchurian. So, without wasting any more time let's get straight into the recipe.

Manchurian Recipe


Ingredients:-

To make the Veggie Balls:-

- A mix of Finely Chopped Vegetables - Salt - as per taste - 4-5 cloves of Garlic(Chopped) - 1/2 inch Ginger - Black pepper powder(As per taste) - 3-4 tbsp Cornflour - 3-4 tbsp Refined Flour(Maida) - Oil - to deep fry

To make the Gravy:-

- 2 tbsp Oil - 1/4 cup Garlic - Green chilli (As per Taste) - 1/2 medium-sized cubed capsicum - 1 medium Onion shells - 1 tbsp Soy sauce - 1 tbsp Schezwan sauce - 1 tbsp red chilli sauce - 1 tsp Ketchup - 3 cups Water - 2- tbsp Cornflour - Water - to make a slurry - Salt(As per taste) - Black pepper powder(As per taste) - Ajinomoto (Optional) - Spring onion greens - to garnish - 1/2 tsp sugar

How to make it?

1) Take the finely chopped veggies in a bowl.

2) Add 2 tablespoons corn starch, 2 tablespoons all-purpose flour (maida), ½ teaspoon black pepper, and salt.

3) Mix the whole mixture together. Just mix very well the veggies and press so that they release their juices. 

4) Then take a small portion of the mixture in your hands and roll it in your palm and make a round veggie ball.

5) Make all veggie balls this way and keep aside. You can spread some oil on your palms while making the vegetable balls.

6) Heat oil for deep frying in a kadhai or pan. Add a small piece of a ball to the hot oil. If the balls do not stick or settle down at the bottom of the pan but come up steadily the oil is ready for frying these veggie balls. If the balls break, then some more binding agent is required. So you can add 2 to 3 tsp of some more all-purpose flour (maida).

7) Gently place the balls in the hot oil. The oil has to be medium hot.

8) Fry the balls till crisp and golden turning them over a couple of times. Take them out on a plate with a kitchen towel.

9) In a small bowl take the three sauces and mix them well.

10) Take another bowl and add 2 tbsp cornflour and some water and make a slurry.

11) Heat a Chinese pan/wok and add 2 tbsp oil and add the garlic, chillies and toss it.

12) Now add the onion and capsicum/bell pepper and toss it for about 30 seconds.

13) Add the prepared sauce mixture and mix them well.

14) Add 1 cup water and stir it for 30 seconds. Now, add the prepared slurry and stir it continuously for a minute.

15) When the gravy starts boiling add the veggie balls and turn off the flame and mix it with the gravy.

Your veg Manchurian gravy is ready to be served. Serve it with some Hakka noodles, Veg fried rice, etc. You can also try this recipe with naan and roti/chapati.

Important Note:-

1) Too much heat will make the Manchurian balls browned from the top and uncooked from inside. Less hot oil will make the balls absorb too much oil.

2) Always cook Chinese dishes on high flame.
